Generally, winter means having something hot and savoury in taste and my go-to comfort food is tomato soup.
Tomatoes are fruit. It constitutes 95 % water and the remaining 5% constitutes of carbohydrates and fibre.
This simple easy tomato soup is very quick to make and tastes great.
1)Heat a cauldron on low flame and add 2 tbsp oil.
2) Add 1 medium-sized onion chopped into a square shape and let it cook till it turns a little golden in colour.
3)Now add 6-7 tomatoes roughly chopped.
4) Add 1 cup of water
5)Add 1 teaspoon salt and mix well.
6)Cover and simmer the cauldron until the tomato mixture softens or for 8 - 10 minutes.
7)Stir occasionally and keep an eye on the consistency of the tomato mixture. If the tomato mixture becomes dry then add water to make them thin.
8)After the tomato mixture has softened, remove them from the heat and let them cool.
9)Once the tomato mixture is cooled down then make a puree of the mixture using a blender.
10)Pour the puree back into the cauldron and simmer it on low flame
11)Add 1 teaspoon of freshly crushed peppers and mix well. It's ready to serve
12)Take the soup in a serving bowl and add the croutons on top of the bowl.
13)Garnish the soup with chopped parsley.
